    For Tony G’s pizza dough recipe, assuming that since you are a Central Milling fan — is their 00 flour high enough in protein to be used in this recipe?

    I have some on hand waiting for the best recipe to use it in.

    1. Howdy Steve, it definitely would work for this recipe. I definitely have run many of the Central Milling flours through the paces on these recipes and it performs well! If you ended up trying it, please let us know how it went.
